Quiche Lorraine


Pastry for a 9-inch pie (Single crust)

1 1/2 cups grated Swiss (Imported variety generally has a more distinct flavor)*

8 slices bacon, cooked crisp and crumbled

3 Eggs

1 Cup heavy cream

½ cup milk

½ tsp. salt

½ tsp. dry mustard

¼ tsp. black pepper

Dash of cayenne 

Evenly layer cheese and bacon into a pastry-lined pie pan.

Using a large fork, beat together remaining ingredients and pour over cheese mixture.  Bake in preheated 375 degree oven for 45 minutes.  Check for firm texture and golden brown color.  Serve hot.

This is a great base recipe; experiment with different cheeses/cheese blends and other meats or vegetables.**

Want to make any morning special?

Prepare your crust wITH CHEESE/FILLINGS the night before. 

Cover tightly.  Place all other ingredients in a mixing bowl – DO NOT BEAT - and cover tightly as well.  In the morning, all you have to do is heat your oven, proceed as directed and amaze your family and guests! 

**diced ham or crumbled, cooked pork sausage (well drained) make great variations.  Try asparagus tips or broccoli florets (steamed for 3-4 minutes and patted dry) for bright color and fresh flavor
